Spicy Fruit Ball Muffin Recipe

As the cooler weather approaches it’s great to indulge in a muffin snack & a hot cup of coffee or tea. Enjoy!
Spicy Muffin Snack
1 tablespoon butter
teaspoon ground cumin
½ teaspoon ground coriander
1 tablespoon lemon juice
1 red apple, diced
4 spring onions, sliced
2 sticks celery, sliced
salt and pepper to taste
1 x 185g can tuna (in brine) 4 muffins, split in half
100g Gouda cheese, sliced
Melt the butter in a frying pan and add cumin, coriander and lemon juice. Combine apple, spring onions and celery and sauté gently for approx 5 minutes until vegetables are tender but still slightly crisp. Season with salt and pepper. Add tuna and heat through. Toast outer side of muffin halves. Spoon vegetables and tuna onto muffins. Top with cheese slices and quickly grill until cheese melts. Serves 4
Fruit Balls
1 cup dates, finely chopped
1 cup prunes, finely chopped
2 cups raisins, finely chopped
1 tablespoon sesame seeds
1 ripe banana, mashed
squeeze lemon juice
½ teaspoon coconut essence
½ cup wheatgerm
juice ½ orange
½ teaspoon grated orange rind
sesame seeds, toasted
Combine all ingredients, roll into balls. Add more banana or yogurt if too dry.Roll in sesame seeds. Chill.
